Rising Rock Recipes

I enjoy cooking!  I am so happy to share recipes and ideas that showcase our meats and bring joy to your table like it does mine.  I am by no means a chef and side with the simple aspects of things.  No fancy 4 course meals for this mama.  I like to cook healthy, flavorful food for my young kids, with a little spice thrown in now and then for my husband and myself.  Please share your ideas with me as well on showcasing Rising Rock meats at your table.  You can also request ideas for different cuts and I'll try my hardest!

Ginger Citrus Marinade for pork steaks or chops

1 Tbsp Orange Zest

1/2 cup Orange Juice

2 Tbsp Lime juice

2 tsp minced garlic

1/2 tsp salt

2 Tbsp soy sauce

1 tsp sesame oil

2 Tbsp Thai Chili sauce

1 Tbsp Honey

Mix Marinade well, pour in ziplock bag over meat.  Remove air.  Let sit in fridge 4-6 hours.

Rising Rock Rubbed Ham

1 Rising Rock Smoke Ham - score the skin

2 Tsp onion powder

1 Tsp garlic powder

1 Tsp dried thyme

1 Tsp dried rosemary

1 Tbsp smoked paprika

1/2 Tsp salt

1/2 Tsp black pepper

2 Tbsp brown sugar

2 Tbsp olive oil

Combine dry ingredients, stir in oil to make a paste and rub into scored ham, let sit at room temp for 1 hour.

​

Cook at 325F until internal temp is 145.  After the first 45 minutes or so, base every 20-25 minutes with the following

​

Mix together

1/2 cup orange juice concentrate

1/2 cup apple juice or pineapple juice

1/2 cup honey

1/4 cup Dijon mustard

1/4 tsp ground cloves

1 tsp ground ginger

​

If you prefer a sweeter ham, add brown sugar to the the above mix as ham gets closer to 125 or 130 degrees.  I prefer my ham less sweet, so I do no add any extra sugar.

Rising Rock Gyro

Rising Rock Steaks

(I used sirloin steaks this time, could use flank or ribeye or probably even stew meat, I'm all about using what you have!)

Pita bread or Naan

(my kids love it when i make my own and it is pretty simple)

Marinade 1-6 hours

1 tbsp dried oregano

1 tbsp minced garlic

1/2 tsp black pepper

1 tsp salt

Juice from half a lemon or about 2 Tbsp lemon juice

1/3 cup olive oil

​

Grill to desired doneness and allow to rest prior to slicing

​

Tzatziki Sauce

1 persian cucumber, grated, salted (let sit for 5-10 minutes), wring out cucumber with your hands and discard the juice.

1 cup plain Greek yogurt

1 tbsp dill 

2 tbsp lemon juice

1/2 tbsp minced garlic

salt and pepper to taste

combine and let set at least 20 minutes

Cucumber Salad

Persian cucumbers

baby carrots

green onions

radishes

mini sweet peppers

sweet peas

This quick pickle salad is a favorite of my girls and I make it with cucumbers and basically anything else I have hanging around.  Slice the veggies and add garlic salt.  Drizzle about 1/2-1 tsp sesame oil and then about 4-6 tbsp rice vinegar or apple cider vinegar.  Let sit about 10 minutes stirring every once in awhile.

Quinoa and Kale Salad, an excellent side to chops or steaks on the grill

1 c. Dry quinoa cooked per package instructions

4 c. Kale, ribs removed, chopped and massaged (just scrunch it in your hands for a few minutes until it starts to get shiny, makes it sweeter and more tender)

1 c. Grape tomatoes, halved

10 mini sweet peppers sliced

4 green onions chopped

Parsley and cilantro chopped

Dressing

1/4 c. Olive oil

1/4 c. Apple cidar vinegar

2 tbsp. Balsamic vinegar

1 tbsp minced garlic

1 tbsp sugar

salt and pepper to taste

I put dressing in a Tupperware and shake it really well then pour over salad and mix

Other options I like: Jalapeno to the dressing to add a kickAdd blanched riced cauliflowerInstead of the tomatoes, add dried cranberries or cherries, or fresh blueberries or strawberries.

Rhubarb Bars, Our favorite spring treat!

Preheat 350 degrees
Crust
2 cups flour
3/4 cup powdered sugar
1 cup softened butter
Combine and press into a 9x13 pan.  Bake for 15-20 min until just starting to brown on the edges.
Filling
4-5 cups chopped rhubarb 
2 cups sugar
4 eggs, wisked
1/2 teaspoon salt
1/2 cup flour
Combine, while crust is baking.  Pour over crust and return to 350 degree oven for 40-45 minutes until set.
